Cooking with Friends: Vegan Wild Garlic Pesto (with Romana)


Hello you lovelies, hallo ihr Lieben,

as I already mentioned in my last post, Romana and I met for a little wild garlic cooking party last week. We made pasta with mushrooms and a really delicious vegan wild garlic pesto Romana-style, which I'm going to share with you today.

wie ich schon in meinem letzten Post erwähnt habe, haben Romana und ich letzte Woche eine kleine Bärlauch-Kochparty verstanstaltet. Wie haben herrliche Pasta mit Champignons und einem richtig guten veganen Bärlauch-Pesto gemacht, für das mir Romana ihr persönliches Rezept verraten hat und welches ich jetzt auch mit euch teilen mag.


What you'll need / Das wird gebraucht

  • 2-3 hands full of fresh wild garlic / 2-3 Hände voll frisch gepflückten Bärlauch 
  • ca. 100 ml soy cream / ca. 1/3 Packungsinhalt von Alpro Soja-Cuisine  
  • 4 tbs. olive oil / 4 EL Olivenöl 
  • 100 g cashew nuts (or pine nuts) / 100 g Cashewkerne (oder Pinienkerne) 
  • 1 dash of water / 1 guten Schuss Wasser 
  • juice of 1/2 lemon / Saft einer halben gepressten Zitrone 
  • 1 small chili pepper / 1 kleine Chilischote 
  • 2 tbs. verjus / 2 EL Verjus (if you can get it nearby, otherwise it will also taste great just with lemon juice) 
  • 2 pinches of sea salt / 2 Prisen Meersalz  
  • 2 hand full of mushrooms / 2 Hände voll Champignons
  • pasta of your choice / Pasta deiner Wahl 
  • olive oil / Olivenöl

How it works / Und so wirds gemacht 

Making the pesto is actually really easy. Simply put the ingredients into a high beaker and mix everything together with a hand-held blender. Taste from time to time to see if you're satisfied with the pesto's flavor and consistency.

Das Pesto zu machen ist eigentlich ziemlich einfach. Einfach alle Zutaten in einem hohen Messbecher vermengen und mit dem Mixstab pürieren. Zwischendurch immer mal wieder kosten, um festzustellen ob Geschmack und Konsistenz für euch passen.   



 
By the way, in case you don't know verjus (I didn't know either before our cooking party): It's a sour juice made from squeezing grapes and it can be used instead of lemon juice or vinegar. It's mostly used in the French region of Périgord as well as in Turkey and parts of Iran. 

Ah ja, für den Fall, dass ihr nicht wisst, was Verjus ist (ich wusste es auch nicht vor unserer Kochparty): Verjus ist ein saurer Saft, der durch das Auspressen von Weintrauben gewonnen wird und anstelle von Zitronensaft oder Essig beim Kochen verwendet werden kann. Am meisten kommt er in der französischen Provinz Périgord, aber auch in der Türkei und in Teilen des Irans, zum Einsatz.  


For the champignons heat up some olive oil in a pan and roast them on medium heat for about five to ten minutes until they are soft. Stir from time to time to prevent the mushrooms from burning.

Für die Champignons einfach etwas Olivenöl in einer Pfanne erhitzen und die Pilze bei mittlerer Hitze für fünf bis zehn Minuten braten, bis sie weich sind. Damit sie nicht anbrennen, von Zeit zu Zeit die Pfanne schwenken.


Boil the pasta in a large pot until it's al dente. Then mix it well with the pesto and the mushrooms, season one last time, and serve immediately!

Die Pasta in einem großen Topf kochen, bis sie al dente ist. Dann gut mit dem Pesto und den Champignongs vermischen, ein letztes Mal abschmecken und sofort servieren.
