Broccoli-Spinach-Soup with Egg


Hey everybody, hallo zusammen,

I hope all of you had a lovely weekend! Mine was really nice actually! :) On Saturday I went to two birthday parties. On Sunday I went into the woods to collect wild garlic, followed by a great wild garlic cooking party with my friend Romana. Recipes will follow soon, but first I wanna share a recipe for a really tasty and healthy broccoli-spinach-soup with egg and hand-made potato chips with you guys.

ich hoffe, ihr hattet ein tolles Wochenende! Meines war ziemlich gut muss ich sagen! :) Am Samstag war ich auf gleich zwei Geburtstagsparties und am Sonntag habe ich mich in die Natur begeben um frischen Bärlauch zu sammeln. Und weil es so schön war, haben Romana und ich den Bärlauch am selben Tag noch verkocht. :) Die Rezepte kommen bald, aber zunächst möchte ich heute ein Rezept für eine richtig gute und gesunde Brokkoli-Spinat-Suppe mit gekochtem Ei und handgemachten Kartoffelchips mit euch teilen teilen.


What you'll need / Das wird gebraucht

(for 4 persons / für 4 Personen)
  • 400 g potatoes / 400 g Kartoffeln
  • 1 spring onion / 1 Frühlingszwiebel
  • olive oil / Olivenöl
  • 1 l vegetable stock / 1 l Gemüsesuppe
  • 1 broccoli / 1 Brokkoli
  • 200 g spinach / 200 g Spinat
  • 2 eggs / 2 Eier
  • a little bit of soy cream / ein bisschen Sojasahne
  • salt and pepper / Salz und Pfeffer
  • a little bit of curcuma / ein bisschen Kurkuma
  • 1 tbsp. maple syrup or agave syrup / Ahornsirup oder Agavendicksaft

How it works / Und so wirds gemacht

Peel the potatoes and square them and chop the spring onion.
For the potatoe chips, put a sheet of baking paper in a baking dish and spread the potato peels over the paper. Add salt, pepper, curcuma, maple syrup (or agave syrup) and olive oil and mix everything well with your hands. Put the potato peels into the oven at 200°C and roast them for about 20 to 30 minutes until they are crisp.

Die Kartoffeln schälen und würfeln und den Frühlingszwiebel in kleine Stücke schneiden.
Für die Kartoffelchips eine Auflaufform mit Backpapier auslegen und die Kartoffelschalen darauf verteilen. Mit Salz, Pfeffer, Kurkuma, Ahornsirup (oder Agavendicksaft) und Olivenöl würzen und mit den Händen alles gut vermischen. Dann bei 200°C für ca. 20 bis 30 Minuten backen, bis sie knusprig sind.


Heat up some oil in a pot. Brown the spring onions and the potatoes for a few minutes, then add the vegetable stock. Bring the soup to boil and let it simmer for about five minutes. Then add the broccoli and the spinach. Cook at medium heat for about ten minutes. In addition boil the eggs for about seven minutes, so that they become medium soft. If you want to save energy you can also cook the eggs directly in the soup.

Olivenöl in einem Topf erhitzen und die Frühlingszwiebeln und die Kartoffeln für ein paar Minuten anbraten. Dann die Gemüsesuppe hinzufügen, aufkochen und für etwa fünf Minuten köcheln lassen. Brokkoli und Spinat dazugeben und bei mittlerer Hitze für weitere zehn Minuten kochen. Auch die Eier wollen gekocht werden und zwar ca. sieben Minuten lang, damit sie kernweich werden. Falls ihr Energie sparen möchtet, könnt ihr die Eier auch direkt in der Suppe mitkochen.


Blend the soup and cut the boiled and peeled eggs in half. Dress the soup in deep dishes and garnish each plate with a little bit of soy cream and one half egg. Serve the potato chips on an extra plate. Done! :)

Die Suppe pürieren und die gekochten und geschälten Eier in die Hälfte schneiden. Die Suppe in tiefen Tellern anrichten und jede Portion mit etwas Sojasahne und einer Eihälfte garnieren. Die Kartoffelchips auf einem Extrateller servieren. Fertig! :)
