How To Make Super Sweet And Super Tasty Semolina Slices

Happy Monday everyone,

how did you spend your weekends? Hopefully good? I had a very lovely one including some cozy wine drinking at a friends' apartment, a trip to the Feschmarkt at Ottakringer Brauerei and a wonderful afternoon dinner with delicious tabbouleh and yummy cake. 
I also want to share a sweet delight today: semolina slices with apple sauce. Those are a perfect dessert as they are very tasty with their coat of breadcrumbs and coconut plus they are easy to make. :)

What you'll need (for 6 persons)
  • 1l milk (I used soy milk)
  • 4 tbsp. butter
  • 60g (cane) sugar
  • 1 pinch of salt
  • 250g wheat semolina
  • 1 organic lemon (organic is important because we'll use the zest)
  • 4 eggs
  • 50g breadcrumbs
  • 100g grated coconut
  • canola oil
  • powdered sugar
  • apple sauce of your choice

How it works

Mix the milk, 2 tablespoons butter, the sugar and the salt in a pot and bring to boil. Add the semolina and cook the mixture with stirring on a slow heat for about 5 minutes until you get a thick purée.


Wash the lemon in hot water, dry it and grate the zest (about one teaspoon). Remove the pot from the heat and stir in two eggs and the lemon zest.


Sprinkle a baking tray with some water. Spread the semolina paste on the tray (rectangle, about 1,5cm thick) and let it cool down for at least 30 minutes. Then cut the cooled off semolina in diamond forms.
Beat the two remaining eggs in a soup plate and in a second plate mix the breadcrumbs and the grated coconut. Heat up some oil in a pan. Turn the semolina slices first in the beaten eggs, then in the breadcrumbs and fry them for about 2-3 minutes from both sides until they are golden brown.


Sprinkle the semolina slices with powdered sugar and serve them with apple sauce. Enjoy! :)
